Dunmow Flitch sausages

A blast from the past. Does anyone remember the Dunmow Flitch sausage? I
recall enjoying these when I was young, and apart from the Goddard's
sausage (now Grayson and Start) of Saffron Walden, these were the only two
I have really eaten over the past 45 years, until recently!
Grayson and Start butchers are in the process of selling their shop to a
local farmer's butcher franchise, so it is uncertain as to their future.
So, can anyone here in the East of England recommend their favourite
sausage, as none have really ever lived up to these two (so far).
The Dunmow Flitch was a fine-ground ****k sausage with little in the way of
spices or herbs (as I recall) with a slightly Irish recipe flavour, and
Grayson and Start are a coarse-ground ****k sausage, with quite a strong
herb flavour but do not seem to taste like they used to now. I have tried
many over the past couple of months, but none live up to these.
Isn't it strange how a taste, like music, can linger for so many years?
I'm
not a lover of spices (nutmeg, ginger etc), and as you can probably tell,
I'm one of those fussy sausage eaters!
