You have this all wrong  ......... sorry to say.  :-(

The only way that you get tender is by ageing the meat, or by killing it 
at an early age  ....... veal any one????

Texture comes from mouth feel ..... how it is cooked.

Flavour comes from how it is cooked.

 From my reading the survey was/is seriously floored
