For a few months I've been on a beans kick, probably after watching too
many
westerns downloaded via other newsgroups. I cook them about twice a week
in
a big pot starting off with onions, celery, sweet peppers, garlic, all
sweated off, then maybe some fresh tomatoes, or tinned if no fresh, +
oregano + I do like ***in. Sometimes I just add tinned pintos at that
stage,
then let them slowly simmer for an hour or two. When eating "plain" beans
like that I usually have Tabasco on the table. Sometimes I jazz it up
first
with hot peppers then add the beans. (Other readily available - and very
cheap! - canned beans in water go into the mix quite nicely.) I enjoy them
daily, usually with a dish of cornbread made in a small deep pie dish, and
rather like them as a side dish to steaks, grills etc. They also make nice
home-made "refried" for breakfast. "Mexican strawberries" as Mr. Duvall in
"Lonesome Dove" called 'em.
Now, the question: sometimes my refrigerated stock of pre-cooked beans is
finished just when I *really* fancy a bowl of beans, some warm cornbread,
and a side dish of sliced jalapenos or similar, and maybe even some grated
cheddar over the top of it all. This usually happens after a few beers
when
I'm not quite capable of cooking. The cornbread is no problem as I can get
that into the oven in five minutes, but prepping and cooking the beans
takes
a couple of hours and these fancies hit me rather suddenly.
Can anyone recommend ready-to-eat canned beans without the usual
overpowering sugary sweetness that comes with most of the commercial
brands?
They don't need to be spiced, as the Tabasco could fix that if I wanted a
hot taste that time. I'd like to have a standby supply of tins in the
cupboard.
