I've always known it as *Welsh* rarebit.

Make a roux from milk, butter and flour.  Dissolve grated cheese into the 
roux to make a very thick cheese sauce.  Toast a thick slice of bread, 
properly on one side, lightly on the other.  Spread the cheese sauce on
the 
lighty toasted side and splash on whatever you like - Worcester****re
sauce, 
wholegrain mustad, even beer! Place under the grill again.

If you want a *really* filling meal, grill a couple of rashers of bacon
and 
place them on the toast, allowing some of the bacon fat to soak into the 
bread. Then pour the cheese on top and grill.  Lovely!  :-D
