Ping ... Pong Beijing

I was googling Olympics Tabletennis (as one does) and came across this food

Our attention was drawn by the Mongolian Hot Pot, which requires wafer
thin 
lamb to be sliced. My wife would like to try this over the w/end.
The ingredients/method state 'boneless lamb'. Can I assume that leg is the

best bit for wafer thin cuts?
Anyone tried MHP, looks like a good cold weather dish? Ping Jean,DC
