Salt & Pepper Spare ribs

Here's one for ya if you want these ribs takeaway style,

1 KG ****k Spare Ribs
1 Cup Corn Flour, here 1 cup = level Chinese Ladle full
1 Tbsp Salt
1 Tbsp Curry Powder
1 Tbsp Light Soy Sauce
1 Tsp White Pepper
1 Tsp MSG

Mix the dry ingredients together in a large bowl then add the soy sauce
and 
enough water to make a thick batter. Thin the batter from here using oil 
(veg or Peanut)until it is easily able to coat the ribs evenly. Let the
ribs 
stand in this mixture for at least 1/2 an hour. Heat your oil to about 190

deg and fry the ribs for about 5 minutes until golden. Remove from the oil

and drain. Reheat the oil once more and fry again for about 5 minutes
before 
serving. You might want to make a coating sauce as some TA do. Mine goes 
like one below but you can experiment with your own

Sauce
1 Tbsp Spring Onions Chopped Including Green Parts
1 Tbsp Chopped garlic
1 Tsp Ginger Shredded
1 Tsp Green Chilli Shredded
1 Tbsp Oyster Sauce
1 Tbsp Light Soy
1 Tbsp Water
1 Tsp Sugar
2 Tbsp Oil

Heat oil in a wok and fry the Onions, Garlic, Ginger and Chilli together 
until softened but not burnt! Mix together the rest of the ingredients and

add to the wok. Fry for a minute or so and pour over your ribs.
