Chefs Sweet & Sour Sauce

Chef,
Just had your recipe sweet & sour tonight. It definitely is the Biz.
Suggest 
anyone who's looking for THE recipe to try this one. Just muck around with

the quantities a bit to get your own preferences or rather your own TA's 
taste but It's a definite 11 out of 10,
