Ideas for Dinner Party please.

In a few weeks time we are having six friends in for a meal which means I
shall be cooking for eight and I want to sit down with the guests.  This
is
becoming a bit of a tradition and will be the fifth time I have done it. 
In
the previous years I have started with spring rolls and crackers or other
finger foods like spare ribs and chicken wings.  Then I get up and go
hammer
and tongues with my wok for almost an hour producing about eight different
dishes and a large pot of rice.  Last year I said "Never again" as I end
up
knackered, with the kitchen in a terrible mess and much complaining from
Madam.  Also because I have to work so fast between the first and main
courses I dare not have a drink :-(  Everybody else is knocking back my
fizz from the moment they arrive.
Can anyone come up with ideas to cater for this party which would perhaps
be
a bit more simple. I still want to start with spring rolls.  My friends 
insist.
