I hadn't seen my friend or his wife in over ten years. Joy was looking
through my copy of "the Jewish Home Beautiful", 1975 printing. Gary was
stumbling through the Hebrew. Joy came across this recipe, which her Bobe
used to make and asked me to send it to her. Here it is:
Helzel (Stuffed Neck)
2 Tbs flour
1 Tbs Matzoh flour
1 tsp farina
1 tsp oatmeal
1/8 tsp salt
dash of pepper and cinnamon
1 tsp minced onion
2 Tbs chicken fat
1 chicken neck
Clean the neck thoroughly of all pin feathers. Sew up the wide end. In a
small bowl, mix together all the dry ingredients, onion and seasoning. Rub
the chicken fat well into this mixture until it is finely crumbled. Stuff
the neck loosely, only about 2/3 full and sew up the narrow end. The
Helzel
may either be cooked in a soup, in a meat stew, tsimis or roasted in the
oven.
