Gil Marks has some interesting views, I believe his book is "The World 
of Jewish Cooking."  There's lots of commentary on the OU site, 
http://www.ou.org
.  Servi-Machlin in "The Cuisine of the Italian Jews" 
seems to be definitive for that community (fascinating recipe for goose 
pastrami, et al.).  Just a start...
