During the year we use extra virgin olive oil for salads
and canola oil for frying but for Passover we get walnut
oil for frying. Last night, I asked, "What are we going
to do with all this walnut oil?" and someone remarked,
"Make brownies!". So we "patchged" around in the kitchen and
came up with brownies made without eggs, sugar or matza meal
(flour).
INSTANT PASSOVER BROWNIES
3 tbl pure unsweetened cocoa powder
1 tbl walnut oil
1 tbl finely chopped walnuts
1 tbl ground almonds
1 tbl pure fruit (no sugar) blueberry jam
Just mix thoroughly, form into squares and freeze
for about 15 minutes.

BTW as someone who's in preventive cardiology, this recipe is
chock full of antioxidants. I might even recommend it to my patients.
