Re: Su**** Connoisseur, what is your favourite su****?

Live scallop if they have it.  Sayori I've had twice but if I saw it 
I'd snatch it quick.  Kohada I see occasionally and it's one of my 
favorites. Saba, as mentioned in an apparent parallel universe, is 
eaten usually first almost everytime I eat in a suhi bar.

All the above mentions are most frequently sa****mi.  I don't usually 
eat su**** unless I'm doing omakase and that's what he's delivering; I 
don't interfere.  I usually save my rice till later and do it in a 
onigiri (rice ball) and preferrably grilled with ume inside.

Uni is a delight but get it only when I happen to see the container and 
it looks like it just arrived in the cooler. Or if it's excitedly 
proffered. If I'm there early in the evening and the uni delivery man 
shows up (I'm in SoCal of course), I'll order it immediately, without 
hesitation, whether I have food in my mouth or have just paid my tab.  
It's one of the best things.

There are many other non-su**** items that I've gotten fixed on, but 
sticking only with the su**** for thread's sake: recently I was 
delivered ama-ebit in su**** format and it came with a little slice of 
lemon and it had been pre-sprinkled with some sea-salt.  I put two 
drops of lemon on it, per the itamae's instructions and It blew me 
away!  Man oh man, that's the way to eat ama-ebi!

Over the years there have been a number of great times I've been 
delivered some really good salt, sometimes blended with green tea or 
muddled with nori, and some kind deep fried item, a shrimp cake or 
tempura or something One sublime time it was fresh ginnan in Autumn 
(ginko nuts), hot in their shells. This stuff with a little of this 
salt is a delight.

Well last night. at Taka Su**** in Costa Mesa I realized the su**** chef 
is no big fan of shoyu, I guess. We were doing omakase, and he was 
bringing su****, all pre-dressed.  We had Japanese Tai with a little 
salt, and aoyagi ("round clam") with lemon and ****so. I began to 
realize that I enjoy a little salt on these su**** items rather than soy 
sauce. It kind of opened up my eyes anew to su**** proper since it a 
little rice there really sup****ts it all.
