Work hourly or as contractor ? Opinion please....

I have been the head chef of a conference center, working for a local
restaraunt owner who held the food service contract.Recently my
employer lost the contract, and the hotel that owns the conference
center has asked me to stay on. I have been given the option of being
paid hourly, or get insurance and be paid as a contractor, me being
responsable for my taxes. I have been incorperated in the past, former
occupation, but still am not sure which way to go. Any advice,
suggestions, thanks, BOB.
