Does this theory cover the whole "chocolate" range? I think that you
will find that what we consider chocolate today is a far cry from what
it used to be. The theory might hold up if the chocolate had a high
cocoa solids (not including the cocoa butter procentage) amount.
Good marketing ploy for the confectioners chocolate although!!
