I am delighted to find this group!
I am originally from SE Texas, but now live in New York. I have always
loved Cajun food.
My question concerns cooking "Red Beans & Rice".
I have several recipes, all a little different, and I've seen a few on
the web as well.
I have never actually tried making it myself, but I do cook a lot of
other things.
My question concerns the addition of either tomato sauce or diced
tomatoes to the beans.
I've eaten this dish all over Louisiana and can't ever recall(or
noticed) that the dish had any tomato in it. Could anyone comment on
this?
Also, if anyone has an especially good recipe, I'd love to have it.
