A Trip to the Grocery

Well, I went to H.E.B. (our local grocer) this morning thinking I was going

pick up the rib-eyes and fixings for Father's Day tomorrow when what do my

eyes spy but some huge-ass packer cut briskets for $1.47/lb.  I grabbed me

up a couple and rushed back to the house to fire up my 55 gallon drum and 
get those puppies cooking.  They cooked from 8am til 2pm when I pulled
them 
out, gave them a wrap in plastic wrap & towels to rest in the igloo for a 
while.  I just finished cutting them into slabs, tossing the flat's burned

ends into the food grinder before tossing them in the pot of beans I have 
going.

Going eat in another hour - brisket, tater salad, Cajun coleslaw, beans &
a 
bunch of other stuff like deviled eggs, tater rolls and the required 
dessert - nanner (banana for you folks that don't speak country) pudding.

I cooked the briskets in a 325-350°F range with the smoker wanting to
settle 
in most of the time at 335°F.  They have a nice 3/8" smoke ring.  I'm
having 
a hard time waiting this last hour.  They look really good.
