I think Janet has hit the nail on the head:  steamed interior and roasted 
exterior.  As I just said to her, I prefer the whole bird be roasted. 
I've 
spatchcocked and I've simply trussed the bird up with string and in both 
cases found the bird quite enjoyable.  I'll stick to these methods.
