Crispy Chipotle Potato Skins

Makes: 8 servings

4 lg potatoes, baking variety; cooked, cooled, & 1/4ed length-wise
1 1/2 Tbsp olive oil
1 tsp chili powder, or chipotle chili powder 1/4 tsp hot pepper sauce
6 slices cooked bacon, crumbled
3/4 cup shredded fat-free cheddar cheese
2 med tomatoes, diced
3 med green onions, finely chopped
3/4 cup fat-free sour cream

Low Down: Use a Lite olive oil & Turkey bacon.

Preheat oven to 425 =B0 F. Scoop out flesh of potatoes, leaving about
1/8th of the flesh inside. In a sm bowl, combine oil, chili powder, &
pepper sauce. Use a pastry brush & brush insides of wedges with oil mix.
Place wedges in 1 layer on a lg nonstick baking sheet; sprinkle with
bacon & cheese. Bake until cheese melts & potatoes are heated through
(abt 15 min.) Sprinkle with tomatoes & green onions; serve with sour
cream on the side.
