Szechwan Chicken Meat Loaf

1 tsp dark sesame oil
2 Tbsp finely chopped green onions
2 Tbsp finely chopped carrot
2 Tbsp finely chopped celery
1/2 tsp minced, peeled ginger root or 1/8 tsp ground ginger
2 garlic cloves, minced
1 cup cooked long-grain rice
1/4 cup chopped water chestnuts
2 Tbsp soy sauce
2 Tbsp all-purpose Szechwan hot & spicy sauce
1 lb. ground chicken or ground turkey
2 Tbsp sesame seeds, toasted
Veggie cooking spray

Heat oil in a sm nonstick skillet over Med-Hi heat. Add green onions,
carrot, celery, gingerroot, & garlic; saute 2 min or until tender.
Combine onion mix, rice, chestnuts, soy & Szechwan sauce in a lg bowl;
stir well. Crumble chicken over onion mix; stir just until blended.
Preheat oven to 350 =B0 F. Pack mix into a 8" x 4" loaf pan coated with
cooking spray; sprinkle sesame seeds over loaf top. Bake for 50 min or
until loaf registers 160 =B0. Let loaf stand in pan 10 min. Remove from
pan; cut into 12 slices.
Serving Suggestion: Serve with Chinese hot mustard & sweet-and-sour
sauce, if desired, a chilled green salad. toasted garlic bread, and a
glass of your favorite wine.

Sandwich Suggestion: Serve leftover meat loaf slices on any one of a
differing variety of sandwich bread with chinese hot mustard & very
thinly sliced green cabbage.
