Cheesy Chicken Enchilada Casserole

Cheesy Chicken Enchilada Casserole

Makes:  6-8 servings
-
2 Tbsp olive oil 
1 lg onion chopped 
2 lb ground chicken or turkey 
1 10 oz can enchilada sauce 
1 8 oz can tomato sauce 
1 cup canned corn 
3 cloves garlic chopped 
2 tsp salt 
1/2 tsp pepper 
1/4 tsp dried rosemary 
1/4 tsp dried oregano 
12 flour tortillas 
2-1/2 cup grated sharp Cheddar cheese 
1 cup shredded queso fresco cheese (or Mozzarella) 
serves 6-8

Preheat oven to 350 =B0 F. Saute onions & garlic in oil in a lg skillet.
Add chicken; cook through; drain off excess fat & put back on heat  Add
1/2 the enchilada sauce & 1/2 the tomato sauce to meat.  Add corn, salt,
pepper, rosemary, & oregano & simmer for 7 min.  Coat a 9x13 " baking
dish with cooking spray. Layer tortillas on bottom of the dish to create
a thin layer (abt 6 torts). Add all the meat mix; sprinkle with abt 1/2
of cheese. Layer with more tortillas (about 6); cover with remaining
sauce & cheese.  Bake for 20 min
