Coconut Chicken Soup

Coconut Chicken Soup

Two 14 oz cn light unsweetened coconut milk 
3 cups canned chicken broth 
2 cups thinly sliced mushrooms 
6 Tbsp finely chopped lemongrass* 
1/4 cup fish sauce (nam pla)* 
2 Tbsp minced fresh ginger 
1 serrano chili, sliced into rounds 
2 tsp chili-garlic sauce* 
8 skinless boneless chicken thighs, thinly sliced 
1/2 cup thinly sliced green onions 
1/4 cup thinly sliced basil 
3 Tbsp fresh lime juice 
*Available at Asian markets & many supermarkets.

Combine first 8 ingredients in a lg saucepan. Bring to boil. Reduce
heat; cover & simmer for 10 min to blend flavors. Add chicken; simmer
until cooked through, (abt 5 min). Mix in green onions, basil & lime
juice; let cool slightly.   

Serving Suggestion: Try this with some sliced French bread, toasted
under the broiler 'till 'golden' brown, a chilled green salad, and a
glass of your favorite wine.
