Vegetable Cheddar Soup

This dish is absolutely excellent when teamed up with a loaf of slightly
stale onion focaccia, Dip some hastily torn pieces into a steaming hot
bowl of veggie and cheddar goodness.

4 Tbsp butter
1 onion chopped
4 carrots sliced
4 celery stalks sliced
3 cups broccoli florets
1/2 cup flour
10 oz of sharp white cheddar grated
2-1/2 cups low-sodium chicken or veggie stock
1-1/2 cups light cream
Salt & fresh ground pepper (to taste)
Croutons - optional (below)

Heat butter in lg dutch oven on med heat until melted. Add carrot,
onion, celery, & broccoli; cook until softened. Stir flour into veggie
mix. Gradually stir in broth & cream. Continue cooking over med heat,
stirring constantly until it boils; boil 1 min more. Slowly stir in
cheese until melted. Top with homemade=9D croutons & serve.

Seeduction Croutons
4 sm slices of Whole Foods Seeduction bread
1-2 Tbsp of olive oil
Salt & fresh ground pepper

Pre-heat oven to 375 =B0 F. Slice bread into bite sized squares. Toss
with olive olive oil, salt & pepper. Bake until toasted to a golden
brown.
Prep Note(s): ~ To keep sodium down & taste up...use some Mrs. Dash
instead of salt. ~There is a veritable myriad of different breads out
there....any thing from black russian rye to sourdough...pick your
fav...or better yet; just 'experiment' around with differnt ones for a
totally different taste sensation in both croutons _and_ dipping breads.
