~ CAUTION -- DECADENCE ALERT !! ~ -
(This is 1 of those times I just 'threw caution to the winds' and put
this one in for y'all...'specially right after 'tax day'. YOU deserve a
'break' somewhere along the line..and this is IT ! Consider this --
when you go out to dinner, you don't stop and ask all the ingredients in
every dish...so it is here -- when all else fails...moderation ...and
'spread out' the good fortune for a while with the rest in the
'fridge....)

Olive Garden's Apple Praline Cheesecake -
Makes: 12 servings

~ CRUST ~
1 cup graham cracker crumbs
2 Tbsp sugar
2 Tbsp butter
~ APPLE MIX ~
1/4 cup butter
1/2 cup light brown sugar
2 lb red delicious apples; peeled -- cored, dice 1/2" pcs
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
~ PRALINE TOPPING ~
1-1/2 cup dark brown sugar
1/2 cup butter -- softened
1 cup pecan pieces
~ CHEESECAKE ~
16 oz cream cheese -- softened
1/2 cup sugar
3 lg eggs
1 cup heavy whipping cream

Low Down: Use your favortie egg substitute, a sugar substitute, such as
SPLENDA for BOTH sugars, a butter substitute, such as Smart Balance, & a
Lo or No fat version of the cream cheese.

CRUST-Melt butter. Stir in crumbs & sugar until thoroughly blended.
Press into bottom 9 " springform pan. Set aside.
APPLE MIX-
In a Dutch oven, melt butter over Lo
heal; add brown sugar, apples, cinnamon, nutmeg & allspice. Simmer on
Lo until apples are soft, but still hold their shape. Cool to room temp;
reserve.
TOPPING-In a sm bowl, mix all ingredients together with a fork until
well incor****ated. Reserve.
CHEESECAKE-In a lg bowl with an electric mixer cream together sugar &
cream cheese on Med speed until light & fluffy. Beat in eggs, 1 at a
time, until smooth. Add cream; continue beating until mix is thick &
creamy. Gently stir in apple mix by hand. Pour into crust. Spread
praline topping over top. Bake at 350 =B0 F for 1 hr 20 min. Allow to
cool to room temp before removing pan sides. Refrigerate until ready to
serve. Garnish with whipped cream.

Prep Note: ~ If using a 'store bought' crust, skip these ingredients &
prep steps
...HOWEVER...
...making your OWN allows you the LUXURY of going with CHOCOLATE grahams
'stead of the ole' 'standard' ones.
~ Cooking times with substitute ingredients might have to be extended
...but only very slightly...monitor closely towards the end of posted
times.
