The key word there was "boiling". You don't want anything truly boiling 
to make dumplings. Put the dumplings in and return it to a rolling 
simmer, not a boil. Also, pay attention to the covered and uncovered 
timing and don't peek during the covered time once you have the simmer 
correct.
