Simply put both will thicken liquids and end up with a semi clear
thickened 
product. Cornflower (AKA corn Starch) requires boiling to achieve the 
result. Arrowroot (St. Vincent's Arrowroot) will thicken liquids off the 
heat at a lower temperature.
