Chocolate-Peppermint Chip Cookies

15 hard striped peppermint
1 cup sifted flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup unsalted butter
6 ounces semisweet chocolate -- chopped
1/3 cup firmly packed brown sugar
1/4 cup light corn syrup
1 large egg
1 large egg yolk
1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Grease cookie sheets.
Crack candies in wrappers into small pieces with hammer. Unwrap into bowl.
Set aside.
Sift flour, baking soda and salt together.
Melt butter and chocolate with sugar and corn syrup in heavy medium
saucepan
over low heat, stirring until smooth. Cool 5 minutes.
Add egg, yolk and vanilla and mix until smooth.
Spoon batter by slightly mounded teaspoonfuls onto prepared sheets,
spacing
2 inches apart and keeping round shape. Bake until cookies are just firm
around edge, about 17 minutes.
Sprinkle generously with candies.
Bake 1 minute longer. Cool slightly.
Transfer cookies to rack and cool completely.
Store in airtight container.
