Minty Sugar Cookies

1 cup butter or margarine -- softened
1 1/4 cups sugar
1 large egg
1/3 cup sour cream
1/4 teaspoon mint extract
1/4 cup minced fresh mint leaves
4 cups all-purpose flour -- unsifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Sugar
unblanched almond slices -- optional
In large bowl, with electric mixer at medium speed, beat butter, 1 1/4
cups
sugar and the egg until light and fluffy.
At low speed, beat in sour cream and mint extract until smooth. Beat in
mint
leaves.
Gradually beat in 2 cups flour, the baking powder, soda and salt, beating
until well combined.
With spoon, stir in enough remaining flour to form a stiff dough.
Divide dough into four equal parts. Wrap in plastic wrap. Refrigerate
several hours.
Preheat oven to 375ºF. Lightly grease cookie sheets.
On lightly floured surface roll dough, one part at a time, 1/4" thick.
With a floured 2 1/2" plain or 3 1/2" scalloped round cookie cutter, cut
out
cookies.
With spatula, place 2" apart on cookie sheets. Reroll trimmings, and cut
more cookies.
Lightly sprinkle tops of cookies with sugar.
Place almond slice in center of each, if desired.
Bake 8 to 10 minutes or until golden. Remove to wire rack. Cool.
Store in airtight container.
