Problems with espresso maker

Hi, 

I have purchased one of those good old espresso makers which you fill
with coffee and water and then put on the stove, I hope you know what
I mean.
The first cup is not bad, but the second one is so sour, that it is
almost impossible to drink it.
It is a well known fact that coffee becomes sour when it is cold, but
the second cup is still quite hot.
Perhaps my mistake is that I leave the coffee in the coffee maker and
so it keeps eva****ating and condensating on the lid. The water drops
on the lid taste sour too. But on the other hand it is only water
eva****ating and should not change too much, right?
Maybe you know more.
