Blue cheese question

Dear All,

Just wondering, my Blue cheese taste after finally 6 months
wonderfull, only this " redish smear " looks ugly:)
Anyone knows why the blue cheese in the stores look so " clean "
compared with the redish smear from our
home made Blues ? Do they cut it away, or clean it up another way ?
