The stock should not be boiling vigorously, just simmering.
Gently lay the dumpling dough on top of the stock and cover.
Don't touch it for 15 to 20 minutes. You didn't say you covered
the pot.
Of course, here is Tennessee, the dumplings are tough slabs of
dough cooked in the broth. Not to my liking at all. Certainly
not like my grandmother taught me to do.
Did you use buttermilk in the biscuit? That makes them really
light.
