Substitute cherries for grapes?

by Barry Harmon <johnfrum@[EMAIL PROTECTED] > Jul 12, 2008 at 07:55 PM

I'm planning to make Grape Harvest focaccia, Schiacciata all'uva, from
"Local Breads," by Dan Leader.

However, on checking the larder, I have no grapes. (nor bananas, either,
but that's another story.) I do have a passel of cherries. Does anyone
have any thoughts on how successful the bread would be if I used pitted
cherries instead of the missing grapes?

I'm thinking of adding a bit of mahlepi to the dough, since mahlepi comes
from a cherry seed and adds a nice flavor.
