Docking

While at the local grocery store today I noticed freshly baked bread
with what appeared to be a cord, something like a round shoelace, over
the top of the bread where it "split opened".  I asked one of the gals
about it and she said that they use it to help split the bread. Anyone
hear of this or know what type of cord they use?
